Like you I have replaced every single hose while the engine was out and have never been able to get rid of a coolant smell when warmed up. Can't find any leaks. No wet floor boards or fogged up windows like when your heater core leaks. I do have to occasionally add a little coolant to my overflow reservoir. Like a cup every 1000 miles or so. I've pressure tested the coolant system and have also tested the coolant for combustion gasses(possible head gasket issue) and found no problems. Drives me nuts every time I smell it. I've always suspected the silicone coolant lines I'm using everywhere might be permeating. But haven't ever heard of others with this issue.
